The composition of butter or mutton fat when buried in waterlogged conditions, changes slowly until it resembles adipocere, the fatty material of long-buried human remains, and bog butter, the fatty material found hoarded in peat bogs. These changes show that chemical analysis of long buried fats and oils must be interpreted with caution. -- AATA
