Various works have been devoted to the determination of the initial content of amphorae from the analysis of the organic traces left in their porous walls. This article presents a method for investigating the presence of olive oil, using gas chromatography, which could be applied to some archeological problems. Various chromatographic techniques have also been used to identify some characteristic compounds of wine, such as tartaric acid and tannins. Traces of wine are often found in the coating covering the internal walls of amphorae which have been submerged in the sea. The coatings have been found to be pine resins.
