Abstract
A reaction between naturally occurring glucose in egg white and amino groups in egg while proteins is described and shown to be a contributor to the highlight yellowing of albumen photographic prints. Incubation studies of plain albumen coatings and processed albumen prints reveal that yellowing is accelerated by high humidity and alkaline conditions. A specific recommendation is given against the use of alkaline buffered paper enclosures and mat boards in direct contact with albumen prints. See also AATA 17-1648.
