This paper examines three deposits on the interior of ceramic pots from the Simmons site at Elma, New York using a scanning electron microscope with energy dispersive x-ray analysis. The results confirmed expectations regarding the preservation of food based upon historical and archaeological reconstructions of the lifestyle and gastronomic habits of the Erie Indians.
