Abstract
Gelatin, the partial-hydrolysis product of a variety of animal bone and skin raw materials, is a valuable natural colloid, used in many industries, with widely varying specifications. This discussion is an annotated basic bibliography. References include those of interest to the manufacturing and use industries, particularly food, pharmaceutical, and photographic. Included are review papers with extensive specific bibliographies. (Abstractor's note: It is difficult to find information on gelatin and its properties. While this is not a state-of-the-art review, it is still one of the best bibliographies and short reviews on where to find information on gelatin, its use and manufacture, and its properties.)
