Abstract
Protease was added to the detergents in foam washing in order to study its effect on energy saving and performance. The addition of calcium ions to the wash solution was found to improve the stability of the protease activity. Gelatin soils were best hydrolyzed and removed at a low flow rate of blowing. When using the soak method of washing, gelatin soils were better removed with a high-speed shaking motion in the incubator. The addition of protease in foam washing is recommended.
