When looking for the weight of meat in domestic animals from their archaeological remains, the best approach still is the individual reckoning of the live weight of any animal; and then, with the help of meat yields, the estimation of the quantity of meat it may have provided. J. Matolcsi (1969) goes by the weight and measurements of bovine metapodials to restore its live weight. Yet, if their dimensions do not vary with time, the compositionmand therefore the weight of archaeological remainsmare deeply altered by their stay in the soil. By revealing a relation between the weight and the length of a bone for a bovine metatarsal, and by comparing with a local breed of reference, the initial weight of bovine bones that were found on the medieval site of Andone were evaluated. The live weights thus calculated converge with the results of recent experiments that were carried out in a natural environment, and at the same time their breaking down, reasoned by butchery yields, leads to the expected values of the weight of meat.
