Abstract
Protection against insect infestation of food going into long- term storage must start with the raw commodity and be continued through processing, packaging, handling, transportation, and storage. The sole objective of such protection must be prevention, for, once an insect, dead or alive, is present in a processed commodity, the food is considered contaminated.
