Abstract
Use of ferment preparations increases the accuracy and effectiveness of many technical processes with reference to applications in the restoration of printed works and manuscripts. An explanation of the chemistry of ferments and their behavior is given; Proteases and carbohydrases are discussed as separate categories. Before employing these substances in restoring a document, one must know all the active components of the preparation.
