Abstract
Characterization was carried out by use of the action of protease bovine on the protein caseine as substrate. Proteases liberate tyrosine from casein, which may easily be quantitatively detected by fluorescence spectrophotometry. Then the rapidity with which enzyme solutions diffuse through various types of paper was analyzed.
