Abstract
Control of the environment of a susceptible material, instead of the application of biocides, is the oldest and the most widely used method of preventing biodeterioration. The limits and optima of temperature and moisture are stable characteristics of microbial species. The reaction of fungi and bacteria to temperature and to water activity are interdependent. Water activity is the most valid measure of physiological drought.
