Abstract
The physical and chemical properties of aged starch paste (* 2furu-nori*1) have been studied. It is highly crystalline and has a lower average molecular weight than fresh starch. <i>Furu-nori</i> has less tack and is firmer than fresh paste. Traditional preparation methods produce the most favorable conditions for retrogradation. -- AATA
