Abstract
In reviewing the literature on all aspects of the tannin/ leather complex, it is apparent that there may be many reasons for the increase in acidity that leads to acid hydrolysis and subsequent deterioration ( red rot ) of leather. Sulfur dioxide plays a realtively minor role. A complex chemical reaction has to be conserved. -- ICCROM
